Mix Vegetable Mash

  • Sweet Potato 1 Large Whole (600g)
  • Broccoli 2 Whole Heads
  • Zucchini 2 Whole
  • Radish 3 Whole
  • Water 500g
  • Salt & Pepper To season
  • Coconut Oil 30g
  • Coconut Milk 1/4 Cup
  • Nutmeg 1 Pinch
Follow 7meals7days
  1. Peel and dice the sweet potato into 3 x 2cm pieces.
  2. Add to cooking basket of Thermomix
  3. Put water in jug and lid without MC on top
  4. Set time for 25 minutes, temp varoma, speed 2.
  5. While the sweet potato is cooking, cut the heads off the broccoli, slice the zucchini and radish.
  6. Add the broccoli and zucchini to the deep part of the varoma dish.
  7. Set the varoma on top of thermomix to cook the broccoli and zucchini.
  8. Arrange the sliced radish onto the flat part of the varoma
  9. Add to the top of the already steaming varoma dish carefully.
  10. When cooked, set vegetables aside.
  11. Tip out the water in the TMX bowl, and add all of the vegetables.
  12. Add the coconut oil and coconut milk with the salt, pepper and nutmeg.
  13. Mash on speed 4 for 20-30 seconds.

Serves 6 as a side dish
