Grain Free Coconut Biscuits

  • Melted Coconut Oil 1/2 Cup
  • Eggs 6 Large
  • Pure Maple Syrup 2 Tablespoons
  • Coconut Flour 2/3 Cup
  • Baking Powder 1/2 Teaspoon
  • Himalayan Salt 1/4 teaspoon

  1. In a small bowl, whisk together the coconut flour, baking powder, and salt.
  2. Melt coconut oil in a cup in microwave for 1 minute on high
  3. In a larger bowl, beat together the coconut oil, eggs, and maple syrup, using a hand held mixer.
  4. Add the flour mixture to the egg/ coconut oil mixture and beat until well mixed.
  5. Drop by spoonfuls onto a greased cookie sheet. Shape into disks approximately 1/2cm thick and 5cm in diameter. The dough will spread while cooking, so don’t over do size.
  6. Makes 12 biscuits.
