  • Sweet Potato 1 Whole Peeled
  • Pure Maple Syrup 4 tablespoons
  • Coconut Oil 1/4 Cup
  • Almond Flour 1 Cup
  • Himalyan Salt 1/2 teaspoon
  • Baking Powder 1 Teaspoon
  • Ground Cinnamon 1 Teaspoon
  • Ground Nutmeg 1 Teaspoon
Follow 7meals7days
  1. Preheat oven to 180°c
  2. Melt coconut oil 30 seconds on high in microwave
  3. Combine wet ingredients in a large mixing bowl
  4. Combine dry ingredients in a small mixing bowl
  5. Add dry ingredients to wet, and mix until smooth
  6. Bake in a greased loaf pan for 35-40 minutes
Notes
  1. Let sit for about 10 minutes before removing from loaf pan or cutting to serve.
  2. This recipe works great for muffins as well, and yields about 10 muffins
