Potato Cake Stacks

Ingredients

  • Medium Potatoes 6 Peeled
  • Brown Onion 1 Whole
  • Tapioca Starch (or corn flour) 2 Tablespoons
  • Salt 1 teaspoon
  • Olive oil 1/2 cup
  • Tomatoes 2 Whole
  • Cucumber 1 Whole
  • Ham or Bacon (optional) 100g
  • Parmesan Cheese 40g
Follow 7meals7days
  1. Peel potatoes and dice into quarters
  2. Peel onion and cut in half
  3. Add both to either the Bellini Supercook or Thermomix bowl
  4. Add the tapioca starch (or cornflour) and salt
  5. Mix on speed 7 for 15 seconds
  6. Heat half the olive oil in a skillet
  7. When sizzling, scoop a dessert spoonful of potato batter into the pan, and spread flat with spatula. Add more of the olive oil as needed.
  8. Turn after a few minutes, cook in batches
  9. Meanwhile, slice the tomato, cucumber and peel the cheese into shavings
  10. Arrange two potato cakes on each plate and arrange with ham (if using), tomato, cucumber and shaved parmesan cheese
  11. Serve

You can use any topping you like, including avocado, spinach or salmon.
