Easy Falafel Salad

Ingredients

  • Fresh Coriander Large bunch (about a handful)
  • Garlic Cloves 2 Whole
  • Ground Cumin 1 Tbsp
  • Ground Coriander 1 tsp
  • Chilli Powder 1 Tsp
  • Chicken Stock Paste (or paste) 1 Tsp
  • Can of Chickpeas (400g) 2
  • Salt & Pepper To taste
  • Carrots 2 Whole
  • Tomato 1 Large
  • Baby Spinach Leaves 100g
  • Lemon Juice 1 tbsp
  • Natural Yoghurt 1 Cup
Follow 7meals7days
  1. In the Thermomix or Bellini bowl, add the coriander and garlic cloves, mince, speed 7 for 5 seconds, repeat if necessary
  2. Add the cumin, ground coriander, chilli powder, chicken stock, drained chickpeas and salt and pepper
  3. Mix on speed 5 for 30 seconds, using the spatula to assist. Repeat.
  4. In a cast iron pan, bbq or non stick fry pan, heat until fairly hot.
  5. Add around a tablespoon of mixture, slightly flattened and cook for around 5 minutes each side, in batches.
  6. While cooking, chop the carrots into large pieces and put in thermomix or bellini bowl, grate, speed 6 for 5-10 seconds
  7. Dice the tomato and set aside
  8. Arrange the baby spinach into 4 bowls, and then the carrot and tomato
  9. Serve the hot falafels on top of the salad, drizzled with yoghurt and lemon juice.
